Where Each Unqiue Flavor Tells A Story!

Tales of the Olive- Products

Extra Virgin Olive Oil

The “Extra” in EVOO represents the absolute highest grade for olive oil — the best you can buy. Extra Virgin Olive Oil contains no more than 0.8% acidity (0.8 grams per 100 grams, expressed as oleic acid), and is judged to have a superior taste, with no flavor or aroma faults.

Fused Olive Oil

Fused olive oil, also known as agrumato in Italy, is made by crushing ripe olives with whole fresh fruits, herbs or vegetables. For example, in the winter, citrus fruit is picked at the peak of ripeness, split in half and then thrown in with the olives. The olives and fruit are then crushed simultaneously.

Infused Olive Oil

Infused olive oil is cooking oil that has been flavor enhanced with natural seasonings. Infused oils can add a tasty flair to dishes that are sautéed or fried. Flavoring oil is also good for bread dipping or drizzled on a salad. Olive oil is known to be one of the healthiest forms of cooking oil, and the infusion of added flavorings makes it all the more popular.

Dark Balsamic Vinegar

Dark Balsamic Vinegar is an aromatic, thick, dark, syrup-like aged vinegar. The best balsamic vinegar is prepared in the hills of Modena, in Italy. Producers start with the white and sugary Trebbiano grapes, which are left on the vine to ripen for as long as possible to develop their sugar.

White Balsamic Vinegar

White Balsamic is a milder and slightly less sweet version of balsamic vinegar. It’s primarily made in the Italian region of Emilia-Romagna by cooking white Trebbiano grapes, but at a higher pressure and lower temperature, to retain its pale and golden hue. From there, it may be aged for no more than one year to retain its lightness. Use it when you’re looking for softer flavors, or aesthetically when you want to keep your sauces and dressings light in color.
